A new Brooklyn Bagels cafe in Roosevelt Park will feature Mediterranean decor and high-end pastries and specialty drinks. The espresso cafe will feature a Tuscan-style exterior and serve up dozens of different bagels, cream cheeses, sandwiches, salads and, of course, a variety of specialty coffees.
Owner Dennis Dyer said the new shop is slated to open this fall in the former Tux Shop building at 3009 Henry on the corner of Summit Avenue. Dyer opened the first Brooklyn Bagels at 475 Whitehall Road in 2001, which he operates with his son, Trevor, 23. Trevor Dyer also will help Dyer run the Henry Street cafe.The North Muskegon shop will stay open and serve as the business’s headquarters, Dyer said. He franchised Brooklyn Bagels at 2327 N. Comfort in Hart in 2004. He said the Henry Street cafe will be more extravagant than the others and will focus “more on coffees.”
The idea for the cafe’s interior design was inspired by the elaborate decor of the cafes Dyer saw during a recent trip to Italy. The Henry Street bagel shop will feature its own “barista” — a bartender who specializes in making espresso coffee drinks — Monday through Thursdays. There will be two full-time baristas on the weekends, he said. It will stay open until 9 p.m., encouraging people to come in for an after-dinner specialty drink. “There are a lot of people who don’t want to sit in a smoky bar,” Dyer said.
At the North Muskegon location, Brooklyn Bagels boasts 37 different types of coffee drinks, 26 different types of bagels and 30 different types of muffins. Read more…
