Cooks are not the entrepreneurs behind the make-your-own meals stores in this area. Owners are financial types who consult with or hire chefs or buy into a franchise - or both.

‘I was approached by a nutritionist to be a business partner,’ says Roxane Morgan, a former financial professional who now is the sole owner of A Meal in Minutes, an independent operation that she hopes to expand to another Cumberland County market.

Setting up the store in Rossmoyne Business Park in April was made easier by having a husband in the building trades.

Morgan’s husband Keven Kurcina, owner of Lone Tree, a Hampden Township custom home building business, did the gutting and build-out for her business and is ready and willing to do the same for others who want to open similar businesses.

‘We would be interested in franchising out’ or simply building a store for other business people, Morgan says.
