The Yats restaurant chain is betting that its flavorful mix of Cajun and Creole dishes will fuel expansion in Indiana and possibly throughout the Midwest.

Hoosiers’ increasing desire for something more exciting than meat and potatoes already has pushed the Indianapolis-based chain to open successful locations on 96th Street in Fishers (April 2007) and in West Lafayette (January of this year). And a new eatery at County Line Road and U.S. 31 South in Greenwood is due to open by the end of this month.

Yats owners said they also are in talks to license their concept to other operators to achieve the company’s goal of opening five to 15 eateries a year — without the need of outside financing or joint partners.

All this is occurring as a rival Cajun/Creole casual-dining chain — J. Gumbo’s, centered around Louisville, Ky. — plans a major expansion of its own into Cincinnati and other Midwestern locations, possibly including Indianapolis.
