Donald ‘Chick’ Orscheln turned his love for preparing barbecue for friends and family into a business when he opened Smokin’ Chick’s BBQ in 2003.
Be sure to note the second apostrophe in Smokin’ Chick’s BBQ before you head to the restaurant to chow down on beef brisket, pulled pork or a slab of smoked ribs.
You won’t find waitresses in tight shirts and short shorts, but you are likely to run into 42-year-old Donald ‘Chick’ Orscheln, the restaurant’s namesake, owner and operator.
He’s around every day, smoking ribs, preparing catering orders or performing general maintenance. He even does the dishes on occasion.
Orscheln and his wife, Lissa Gaw-Orscheln, opened Smokin’ Chick’s in 2003 in the food court at Columbia Mall. Before that, they operated a Breadeaux Pizza franchise in Columbia for about 6 years.
Renovations to the mall’s food court led the Orschelns to move out after 6 months. They found a location on John Garry Drive, which is off Southampton Drive between Providence Road and Bethel Street. Read more.
