Owning and running a restaurant requires great financial sacrifice, with the constant pressure of making sure the venture is profitable and growing. But Milton R. Berlinski isn’t concerned about those things.

Berlinski, owner of Aqua Marine Grill and Amazonia Churrascaria, both located in Palm Beach Gardens’ Legacy Place, said he’s not in the business for the money. And he’s not looking to grow via franchising. Instead, the 51-year-old is scouting new locations from Boca Raton to Aventura for his next concept, and making sure his patrons have a good dining experience so they keep coming back – even if it means he doesn’t break even in the current fickle and sluggish restaurant market.
