New Franchisee Takes Over Two Louisville J. Gumbo’s Stores

A local businessman has purchased the franchise rights to two Louisville locations of J. Gumbo’s Down Home Cajun Cookin’ and is investing time and resources to improve the restaurants’ operations.

Paras Tiwari said he acquired the rights to J. Gumbo’s stores at 416 S. Fourth St. and 3115 S. Second St. from company founder Billy Fox Jr. for a combined $130,000. J. Gumbo’s is a Louisville-based fast-casual concept that serves cajun cuisine.

Tiwari is one of several new owner/operators of J. Gumbo’s restaurants in recent months, as the concept has expanded in surrounding states.
